Do I have to leave property to my children in my Will?

You do not have to leave anything to your children in your Will in Mississippi.  However, you should mention them and leave them $1.00 or something to make it clear what they are to receive.  If a child is born after a Will is made that child will have rights if there is no provision in the will addressing this child.
